About this dish
A thick tranch of line-caught wild halibut from the North Sea is sealed in a parchment parcel with a generous knob of clam butter — made from Scottish surf clams, white wine, and cold unsalted butter — and a handful of fresh samphire. Steam-roasted in the oven, the parcel is brought to the table and opened at the last moment, releasing a cloud of ocean-scented steam. Sea vegetables and a vivid herb oil finish the dish.
