A centre-cut fillet of Hereford beef, dry-aged for 45 days on the bone in our dedicated ageing cabinet, seared in cast iron and basted continuously with brown butter, thyme, and crushed garlic. Sliced tableside over a silken pomme purée made with equal parts butter and potato, flanked by a whole confit shallot and a deep bone marrow jus reduced for six hours from roasted veal bones.
