A perfect hollow sphere of Valrhona Guanaja 70% chocolate sits at the centre of the plate. Warm Armagnac caramel sauce is poured over tableside, melting the shell open to reveal a cloud of salted caramel mousse and a bed of house-made hazelnut praline. The contrast of temperatures — the warm sauce against the cold mousse — makes this one of the most theatrical moments on the menu, and one guests return for.
