A classic Tarte Tatin prepared with Cox's Orange Pippin apples from a family-run orchard in Kent — sweet, tart, and intensely flavoured. The apples are arranged tightly and cooked slowly in a caramel of salted Normandy butter and unrefined cane sugar until deeply amber, then covered with an all-butter puff pastry and baked until the pastry is shatteringly crisp. Finished at the table with aged Calvados and served with a generous spoon of crème fraîche.
